After 20 years of experiment Essex inventor Joseph K Wildman brings cooking back to the days before coal with an open-topped wood burning grill, an indoor barbecue using sticks not charcoal beneath a chimney. The explosive woosh! of hot fat fires is replaced by the steady drip and splutter of fat burning away, a method well understood from Stone Age to early Tudor times.
